- 2 tbsp sesame oil
- 2 cloves garlic (minced)
- 1/2 cup red onion (diced)
- 2 cups mushrooms (sliced)
- 1 cup carrots (julienned)
- 1 cup snow peas
- 2 tbsp rice wine vinegar
- 1 1 /2 cup vegetable stock
- Juice of 1 lemon
- 3 tbsp soy sauce
- 1/3 cup brown sugar
- 8 oz lo mein/rice noodles
- salt & pepper to taste
Directions:
- Sauté sesame oil, garlic and onion until tender in the instant pot
- Add rice wine vinegar, vegetable stock lemon juice soy sauce and brown sugar. Mix until blended well.
- Add uncooked lo mein/rice noodles
- Add carrots, mushrooms and snow peas
- Lock lid and set vent to seal
- Press manual button and set to high for 5 minutes
- Quick pressure release carefully
- Serve and enjoy
