Wash thoroughly and
scrape (peel) carrots.
Carrots may be
left whole, sliced or diced.
Pack jars
with carrots.
Add ½ tsp. salt and fill jar
with hot water.
Wipe off jar rim.
Boil flats and place flats and rings on the
jars.
Pressure Cook – Process at 10
pounds pressure – pints25 minutes, quarts 30 minutes.
Process at 15 pounds pressure – pints
and quarts 15 minutes.
