Salsa

2 cans Diced Tomato's
1 1/2 tsp Garlic Salt (or more to taste)
2 Tbs Elpato Sauce (yellow can with duck on it)
2 Tbs White Vinegar
1 Tbs Sugar (can add less)
1/2 can diced green chilies (other half can be placed in a baggie and then freeze for later)
Cilantro (close to a full bunch)

Put all ingredients in a blender and pulse until it is mixed and at the consistency that you want.

Serve with tortilla chips!

7 Layer Bean Dip

1-2 Cans of Refried Beans
1 1/2 Cups Sour Cream or Greek Plain Yogurt
1-2 tsp Taco Seasoning
3 Medium Avocados
1/2 Juice of a Lime
Salt
Shredded Cheese
1 Medium/Large Cans of sliced Olives
Green Onions
Tomato's
Chopped Cilantro (optional)

Tortilla Chips

  1. In a glass 9x13 dish first layer the refried beans in the bottom.  Mash the avocados and mix in the lime juice.  Salt to taste then layer on top of the beans.
  2. Next mix the taco seasoning into the Sour Cream/Yogurt start with 1 tsp and taste if it needs more then add another 1/2 tsp-1 tsp more.  Layer on top of the avocado mixture.
  3. Sprinkle the shredded cheese to cover the sour cream.  The rest of topping are optional add Olives, Green Onions, Tomato's and Cilantro.  Store in the refrigerator until ready to serve.  Enjoy with tortilla chips.

Thai Chicken Cilantro Soup

4 C  Chicken Broth
3 or 4 Chicken Breast Tenderlions
1/2 C uncooked rice
1/4 C Chopped Cilantro
1 Can Coconut Milk
1/8 C Lime Juice
1/8 C Fish Sauce
2 or 3 Chopped Green Onions
1 or 2 tsp Ginger
1/2 of 15 oz can Straw Mushrooms
Roasted Red Chili or Roasted Red Curry Paste


  1. Boil chicken broth and add chicken and rice and cook until rice is done. 
  2. Chop chicken and return to pan. 
  3. Add cilantro, coconut milk, lime juice, fish sauce, green onion, ginger, mushrooms.
  4. Add roasted red chili paste or roasted red curry paste.

Grilled Lime Coconut Chicken

Ingredients:
  • 3 Tbls oil
  • Zest and juice of 1 lime
  • 1 tsp ground cumin
  • 1 1/2 tsp ground coriander
  • 2 Tbls soy sauce
  • 1 1/2 tsp salt
  • 2 Tbls sugar
  • 2 tsp curry powder
  • 1/2 cup canned coconut milk
  • pinch cayenne pepper
  • 2 lbs chicken breast (can cut them in half to soak up all the yumminess)
  • 1/4 cup cilantro (chopped)
  • Limes (cut into wedges)

Directions:
  1. In a large liquid measuring cup or medium bowl, whisk together the oil, lime zest, lime juice, cumin, coriander, soy sauce, salt, sugar, curry powder, coconut milk and cayenne pepper.  Place the chicken in a large ziplock bag and pour the marinade over the chicken.  Seal the bag and refrigerate for at least 2 hours and up to 8 hours.
  2. Preheat gas grill to medium-high heat.  Grill the chicken for 6-7 minutes per side (depending on thickness).  
  3. While the chicken is cooking pour the marinade into a saucepan.  Bring the mixture to a rolling boil and boil for 10 minutes, stirring occasionally.
  4. Place the grilled chicken on a serving platter or plate.  Drizzle with the sauce and sprinkle fresh cilantro over the top.  Serve with lime wedges and additional sauce.

Coconut Lime Chicken Soup

Note: next time double the recipe. Try making the rice and having it on the side instead of putting it in the soup.

Ingredients:

  • 3 Tbls butter
  • 1 Carrot (shredded)
  • Thai seasoning (see below)
  • 2 cups chicken broth
  • 1/2 bunch fresh cilantro
  • 1 15 oz can unsweetened coconut milk
  • 1 2-2 1/2 lb deli-roasted chicken (shredded)
  • 1 cup previously cooked long grain rice
  • Juice from 1 lime
  • 1 Tbsp soy sauce
  • Cilantro for garnish (optional)
  • Lime Wedges (optional)

Thai Seasoning:
  • 1/2 tsp curry powder
  • 1/4 tsp cinnamon
  • 1/4 tsp salt
  • 1/4 tsp chili powder
  • 1/2 tsp paprika
  • 1/4 tsp ginger

Instructions:
  1. Place a large pot on the stove over medium-high heat.  Add butter, carrots and thai seasoning and cook until carrots become soft.
  2. In a blender add chicken broth and cilantro and pulse a few times, then pour into the pot.
  3. Add coconut milk, shredded deli roasted chicken, rice, lime juice and soy sauce.  Bring to a low boil then remove from heat.
  4. Serve topped with extra cilantro and lime wedges.

Chicken Ranch Wraps

Ingredients:
  • 2 Cups cooked grilled chicken breast chopped (seasoned with your favorite spices or fajita seasoning)
  • 1/4 Cup Hidden Valley Ranch dressing
  • 1/2 Cup Mozzarella Cheese
  • 1/4 Cup Cilantro (minced)
  • Tortillas

Directions:
  1. Lay tortillas on a clean flat surface.  Place about 1/2 cup of chicken, 1 Tbls ranch, 2 Tbls of cheese and 1 Tbls of minced cilantro on each tortilla.  Fold tightly to form a burrito shape.
  2. Heat a heavy duty pan or grill to medium heat.  Coat with a light layer of oil or cooking spray and cook wraps for 1/2 minutes on each side or until the tortilla is crispy and golden.  Remove from heat, slice in half and serve immediately.

Note: If seasoning your chicken you can grill it in a hot pan for 5-6 minutes.

Prep time: 5 mins
Cook time: 5 mins
Total time: 10 min

Chicken Curry


Ingredients:

  • 1 tsp Fresh grated ginger
  • ½ cup Onion, chopped
  • 4 Carrots, peeled and sliced
  • 1 Tbsp Curry Powder
  • ½ tsp Ground Cumin
  • ¼ tsp smoked paprika
  • Juice of 1 lime
  • 1 Tbsp Chicken Bouillon Base
  • 1 Cup Water
  • 4 Thin slicked chicken breast, thawed
  • 2 Potatos, 1 inch diced
  • 1 large red pepper, diced
  • 14 oz can coconut milk
  • 14 oz can diced tomatoes
  • 1 tsp salt
  • ½ tsp pepper
  • 1 cup frozen peas
  • Cilantro, chopped

Instructions:

1. In a stovetop or electric pressure cooker, heat the oil (use the Saute function on the Instant Pot) until rippling and hot. Add the curry powder and cook, stirring constantly, for 30-45 seconds.  Add the onion and ginger.  Cook another 30 seconds, stirring constantly.  Add the carrots, bouillon, cumin, paprika and water and heat for 10 minutes.

2. Add the lime, chicken, potatoes, red pepper, coconut milk, tomatoes, salt and pepper.  Close the lid on the pressure cooker and cook on high pressure for 4 minutes (hit manuel and adjust time to 5 minutes).  On the Stove top, bring to a boil and cook until chicken and potatoes are done- about 20 minutes.

3. Let the pressure naturally release before removing the lid.  Once done, stir in peas and cilantro.  Serve over hot, cooked rice or quinoa.

Takes about 1 hour 45 minutes to make start to finish.

Tips:

·       When cooking with butter, heat pan up with butter in it.

·       When cooking with oil, add the oil after the pan is hot.

·       The more you mince garlic the stronger it is.

·       Add 2 Tbsp of kosher salt to the water per pound of pasta

Mexican Vegetable Soup


Ingredients:
  • 1 1/2 cups chopped yellow onion (1 medium)
  • 1 cup peeled and diced carrots (2 medium)
  • 1 1/2 Tbsp olive oil
  • 2 cloves garlic, minced
  • 5 cups vegetable broth
  • 1 1/2 (14.5 oz) cans diced tomatoes with green chilies (Rotel)
  • 1 medium zucchini, chopped (1 3/4 cups)
  • 6 oz diced green beans (1 1/4 cups), optional (*Can substitute squash for beans)
  • 1 red bell pepper, diced
  • 1 tsp dried oregano (Mexican oregano if you have it)
  • 1 tsp ground cumin
  • Salt and freshly ground black pepper
  • 1 3/4 cups frozen corn or drained and rinsed canned hominy
  • 2 Tbsp fresh lime juice
  • 1/2 cup chopped cilantro 
  1. Heat olive oil in a large pot over medium-high heat. Add onions and carrots and sauté 3 minutes then add garlic and sauté 1 minute longer. Stir in vegetable broth, tomatoes, zucchini, green beans, bell pepper, oregano, cumin and season with salt and pepper to taste. Bring to a boil then reduce heat to medium-low, cover and simmer until veggies are soft, stirring occasionally, about 20 minutes.
  2. Stir in corn, lime juice and cilantro and cook until corn is heated through. Serve warm.
**Note when making in the instant pot:
Sauté the onions and carrots in the instant pot first then add the rest of the ingredients.  Put the lid on and move valve to sealed position.  Select the soup function and adjust to less.  When finished you can do a natural or quick release.

Sweet Chili Chicken with Pineapple Salsa

Chicken:
Juice from 1 large lime (2-3 Tbls)
1 1/2 Tbls Curry Powder
2 tsp veg or Olive Oil
1 lb chicken tenders (about 8)
Salt 
Black pepper
Lime wedges (opt)

Salsa:
1 1/2 Cups diced pineapple
1/4 Cup  or less of thinly sliced red onion
1 avocado, diced
1 Tbls fresh lime juice
3 Tbls cilantro, chopped
Pinch of salt

Sauce:
3 Tbls Sweet Chili Sauce
1 Tbls honey
1 1/2 tsp Soy Sauce
1 Tbls warm water

Chicken directions:
Place lime juice, curry powder and oil in a large zip top bag and shake lightly to combine.  Add chicken tenders and marinate at least 30 minutes and up to 4 hours.  Preheat grill to medium high heat and oil grill grates.  Remove chicken from marinade and sprinkle both sides lightly with salt and pepper. Grill chicken about 3 minutes on each side or until internal temp registers 165 degrees F.

Salsa direction:
Combine all salsa ingredients and gently toss to combine.  Refrigerate until ready to use.

Sauce directions:
Combine sweet chili sauce, honey, soy sauce and warm water and whisk with a fork until smooth.

To Serve:
Plate grilled chicken tenders, top with salsa and drizzle with sauce.  Serve with lime wedges if desired. (Can serve with rice - See Sweet and Savory Coconut Rice Recipe)

Note: sweet chili sauce can be found in the Asian food section of a grocery store (Thai Kitchen is a popular brand found in most locations)

Shrapnel Bean Dip

Ingredients:
1 can of White Beans (Navy or Great Northern)
1 can of Black Beans
1 can of Corn
1-2 Avocados (diced)
1/4-1/2 cup of Red Pepper (diced)
1-2 Roma Tomatoes
2 Tbls Red Onion (finely chopped)
2-3 Tbls Cilantro (finely chopped)
1/3 cup Italian dressing (add more if needed)
Squeeze of a fresh lime (about 1/2 Tbls or 1/2 of a lime)
Salt and Pepper to taste
Tortilla Chips

Directions:
1. Drain and rinse the beans and corn.  Dry as best as you can, use a salad spinner and/or place on a paper towel to blot dry.  After they are completely dry add to a large bowl.
2. Add avocados, red pepper, tomatoes, red onion and cilantro to the bowl.  Mix together and then pour the dressing over the top of the salad.  Mix until everything is coated evenly. (If making in advance wait until right before serving to chop and stir in the avocados.)
3. Squeeze the lime juice over the top and gently mix in. Salt and pepper to taste and serve immediately with chips.

Cilantro Lime Rice

4 C Chicken Broth 
2 C Uncle Ben's Original Long Grain Rice 
2 Cloves of Garlic 
1/2 Bunch of Cilantro 
1 Can Green Chilies-(or equivalent fresh) 
1/4 Onion 
1/2 Limes Juice 

Blend garlic, cilantro, green chilies, onion & lime juice together in food processor. Add all ingredients to your rice cooker stir and cook stirring a few times in between.

Potato Rounds/Irish Nachos

Ingredients: 
  • 1 1/2 Pounds of potatoes (Cleaned and sliced 1/4 inch thick)
  • 2 Tbls Olive Oil
  • 1/2 tsp dried rosemary leaves (crushed)
  • 1/2 tsp Thyme
  • Salt & Pepper
  • 6 Bacon slices (cooked, drained and crumbled) 
  • 1 cup Shredded Cheddar Cheese
  • Barbecue Sauce
  • Sour Cream or Greek Yogurt (optional)
  • Pico de gallo/salsa/diced tomatoes (optional)
  • 2 minced Green Onion slices (optional)
  • 1 Tbls Chopped Cilantro leaves (optional)


Directions:
  1. Preheat oven to 450º. Wash and slice potatoes leaving the skins on.  
  2. Put potato slices into a bowl or gallon zip lock bag.  Drizzle olive oil, rosemary and thyme over potatoes and mix to coat the potato slices.  
  3. Place the potato slices, in a single layer, onto a baking sheet.  Bake 20 minutes, turn over and bake an additional 20 minutes.
  4. Using a pastry brush, generously brush the potato slices with barbecue sauce.  
  5. Sprinkle each potato slice with the crumbled bacon and then top with the cheese.  Return to the over and bake 3-5 minutes or until the cheese is completely melted.  
  6. Sprinkle with green onions and cilantro.  Then serve with sour cream, yogurt and/or salsa/tomatoes.
