Pancakes

1 cup Flour
2 Tbsp Sugar
2 tsp Baking Powder
1 tsp Salt
1 Egg
1 cup Milk
2 Tbsp Oil
1 tsp Vanilla

Mix all the ingredients together in a bowl and cook the pancakes on a skillet.

Walking Tacos

Ingredients:

1 lb Ground Beef or Turkey 70-80% lean

1 tbsp Chili Powder

½ tsp Salt

¾ tsp Cumin

½ tsp dried Mexican Oregano

¼ tsp Garlic Powder

¼ tsp Onion Powder

½ cup Tomato Sauce or Ketchup

 

Cheese Doritos (large bag or small snack bags)

Shredded Lettuce

Sour Cream

Shredded Cheese

Salsa

Sliced Olives

Diced Tomatos

Ranch

Beans (optional)


Directions: 


1. Brown ground beef then season with chili powder, salt cumin, oregano, garlic, onion and tomato sauce.  


2. Prepare other toppings.


3. Start with Doritos, slightly crush in bag or bowl, top with ground beef and other toppings.  Mix together and enjoy!

Caesar Chicken Salad

Large Caesar Salad Kit
Rotisserie Chicken
Tortellini
Cherry Tomato’s

Directions:

1. Cut the chicken into bite size pieces.  Boil the noodles and drain.  Cut tomatoes in half. 

2. Combine everything into a large bowl and drizzle the contents of the salad kit over everything. Toss together and serve.

Red & White Mostaccioli

Ingredients:
1 lb uncooked tubular pasta (3 cups uncooked)
I jar of Alfredo Sauce
1 (26 oz) Spaghetti Sauce
3 Cups of shredded Mozzarella Cheese

Directions:
Preheat oven to 350 degrees.  Cook pasta according to packaging directions and drain.  Spread a thin layer of spaghetti sauce in the bottom of a 9x13 baking dish.  Layer half of the pasta, Alfredo and spaghetti sauce and half of the cheese.  Repeat layering with the other half of the pasta, Alfredo, spaghetti sauce and cheese.  Cover with tin foil and bake for 30 mins or until hot and bubbly.

S'mores Dip


Ingredients:
  1. 3/4 cup semisweet chocolate chips
  2. 8 large marshmallows; cut in half (You can use mini marshmallows as an alternative)
  3. Graham crackers for dipping
Instructions:
  1. Preheat oven to 450 degrees F.
  2. In a small cast iron skillet, put chocolate chips in an even layer.
  3. Arrange the marshmallows on top of the chocolate.
  4. Bake in the oven for 6-8 minutes, until marshmallows are lightly browned.
  5. Remove from the oven and let stand for 5 minutes.
  6. Serve with graham crackers for dipping. Skillet will be hot!

Yogurt Ritz Chicken

Ingredients:

2 C. Crushed Ritz crackers 
2 Tbl. Parmesan Cheese 
1 Tsp. Garlic Salt 
1 Tsp. Season Salt 
8 Boneless Chicken 
1-1 1/2 C. Plain Yogurt 
¼ C. Melted Butter

Directions:


Mix crushed crackers, cheese, garlic salt, season salt into bowl.  Dip chicken into yogurt then into cracker mixture. (Start with 1 cup of yogurt and add more if you need to).  Place into greased pan. Pour melted butter over top if desired (Optional - Butter can make the chicken soggy). Bake 350 degrees for 45 min.

Apricot Chicken

Ingredients:
Chicken
8 oz. russian salad dressing
1 pint of apricot halfs w/ juice
2 tsp curry powder
1 pkg lipton onion soup

Directions:
Blend all ingredients, except for the chicken, in the blender.  Place Chicken in a 9x13 pan and pour mixture over the chicken.  Bake at 350 for 50 mins (check at 40 mins, has been over cooking).  Serve with rice.
