Pancakes

1 cup Flour
2 Tbsp Sugar
2 tsp Baking Powder
1 tsp Salt
1 Egg
1 cup Milk
2 Tbsp Oil
1 tsp Vanilla

Mix all the ingredients together in a bowl and cook the pancakes on a skillet.

Overnight Tater Tot Breakfast Casserole

INGREDIENTS:

 12 to 16 ounces breakfast sausage (see note)
 1 cup small diced bell peppers (any color)
 1/2 cup small diced onion
 6 large eggs (see note)
 1 cup milk
 1/2 cup sour cream
 1/2 teaspoon salt
 Pinch of black pepper
 24 ounces (about 6 cups) frozen tater tots
 1 cup (4 ounces) grated cheddar cheese
 1 cup (4 ounces) grated Monterey Jack cheese
 Chopped green onion or chives, for garnish (optional)
 Sour cream and salsa, for serving (optional)

INSTRUCTIONS:
  1. In a large skillet over medium heat, cook the sausage, peppers and onions, crumbling the sausage into small pieces as it cooks, until it is no longer pink and cooked through and the veggies are tender. Drain the grease (you can let the sausage/veggies hang out in the skillet for a minute or remove them to a plate).
  2. In a medium bowl, whisk together the eggs, milk, sour cream, salt and pepper until smooth.
  3. Lightly grease a 9X13-inch baking pan. Place the tater tots in a single layer across the bottom of the pan. (Use only as many tater tots as will fit in a single layer).
  4. Sprinkle sausage over the tater tots followed by the veggies. Sprinkle cheese evenly across the top.
  5. Pour the egg mixture evenly over and across the top. Cover the dish with lightly greased foil and refrigerate (overnight, up to 18 hours). OR you can bake it right away. The tater tots won't break down quite as much, but it is still delicious.
  6. Preheat the oven to 350 degrees F. Bake covered for 25 minutes. Uncover and bake 20-25 minutes longer until golden, bubbly, and set. Check to make sure the middles is baked. Sprinkle with green onions or chives, if using. Serve warm.


NOTES:

Sausage/Meat: this recipe is super adaptable to changing what kind of meat you use OR it can easily be left meatless. Chopped ham or cooked bacon would work great, too, in place of the sausage or in addition to.

Eggs: I continue to make this over and over (since posting) and it's easily adaptable to more eggs if you want to increase the quantity (I've done up to 10 large eggs).

Cream Puffs


1 C Water
1/2 Butter or Margarine
1 C Flour
4 Eggs

Filling - pudding or can make mini sandwiches 

Directions:
  1. Heat oven to 400 degrees.  
  2. In a sauce pan on the stove melt butter and then add water.  Then bring to a rolling boil.  
  3. Over low heat vigorously stir the flour for 1 minute or until mixture forms a ball. Then remove from heat.
  4. Add eggs and beat in with hand mixture until smooth.
  5. For bite size dessert: use #50 cookie scoop to scoop onto a cookie sheet. Bake for 25-30 minutes or until they are puffed and golden. 
  6. For mini sandwiches: Drop dough by scant 1/4 cup fouls 3 inches apart onto untreated baking sheet. Bake 35-40 minutes or until puffed and golden.
  7. Cool away from draft. Then cut of tops and pull out any filaments of soft dough.
  8. Fill puffs with pudding or whipped cream.  
  9. Replace tops; dust with powdered sugar and refrigerate until serving time.
Yield: 30 dessert size cream puffs or 12 cream puffs - sandwiches

Overnight Creme Brulee French Toast Bake


Ingredients

  • 6 tablespoons butter 
  • 3/4 cup (5.5 ounces) packed light or dark brown sugar 
  • 2 tablespoons pure maple syrup (can sub corn syrup or pancake syrup) 
  • 6 (1-inch thick) slices French bread, cut into 3/4-inch cubes (see picture in the post) 
  • 4 large eggs 
  • 1 cup half-and-half 
  • 1 tablespoon vanilla extract 
  • 1/4 teaspoon salt 
  • Sweetened whipped cream + fresh strawberries/raspberries, for serving 


Instructions
  1. Add butter, brown sugar, and maple syrup to a microwave-safe bowl, and microwave for 1-2 minutes, until the sugar is dissolved. Stir to combine. (This step can be done in a pan on the stove.)
  2. Lightly grease a 9X13-inch pan with cooking spray.
  3. Spread the brown sugar mixture in the bottom of the pan and arrange the bread cubes in a single layer over the top.
  4. In a bowl or liquid measuring cup, whisk together the eggs, half-and-half, vanilla, and salt.
  5. Pour the mixture evenly over the bread.
  6. Cover the pan and refrigerate overnight (8-10 hours).
  7. Remove the pan from the refrigerator, uncover, and place in the cold oven. Preheat the oven to 350 degrees F. Once the oven reaches temperature, bake for 30-35 minutes, until the bread is golden and the caramelly syrup is bubbling (alternately, if you want the golden syrupy goodness on top, the french toast can be baked for 20 minutes, then using a large, flat spatula, flip the bread pieces and bake for another 10-15 minutes).
  8. Serve immediately with sweetened whipped cream and fresh raspberries or strawberries.


Yield: 6-8 servings 
Prep Time: 10 minutes 
Cook Time: 40 minutes 
Additional Time: 10 hours

Ham Fried Rice


Ingredients

  • 3 cups uncooked rice 
  • 3 tablespoons oil 
  • 2 teaspoons garlic minced 
  • 1 packet fried rice seasoning 
  • 1/4 cup soy sauce 
  • 4 eggs 
  • 1 cup thick cut deli ham 
  • 2 cups peas 
  • 5 green onions 
  • salt and pepper to taste 


Instructions

  1. If you aren't using leftover rice, start your rice cooking. While rice is cooking, chop meat and onions into small pieces. Scramble eggs and scoop off onto a plate. I use frozen peas, so I thaw them under some cool water at this point as well.
  2. When rice is prepared, heat oil, garlic and onions in your pan. Add rice. 
  3. Gradually add in fried rice packet and soy sauce. Once well mixed add all remaining ingredients and salt and pepper to taste. Enjoy!

Prep time: 5 minutes
Cooke time: 15 minutes
Total time 20 minutes

Fried Mac & Cheese

Ingredients:

Favorite Mac & Cheese Recipe
2 Eggs
1/4 C Milk
3 C Bread Crumbs
Vegetable Oil (for frying)

Optional Sauces:

Ketchup
Mustard
Ranch
Barbecue Sauce
Salsa
Guacamole
Marinara Sauce

Directions:
  1. Form your cold macaroni & cheese into 1 inch balls and place on pan.  Put pan in freezer for 1 hour.
  2. Beat Eggs and milk in a bowl to make an egg wash.
  3. Dip balls into egg wash then roll in bread crumbs and coat completely.
  4. Heat oil in deep fryer to 320 or fill a skillet 1/2-3/4 deep and head over medium heat to 320.
  5. Fry the coated mac & cheese balls for 3-4 minutes and place on paper towel.
  6. Serve with sauce

German Pankcakes

6 Large Eggs
1 Cup Milk
1 Cup Flour
1/2 tsp Salt
2 Tbls melted butter

Preheat oven to 400 degrees.  Place the first 4 ingredients into a blender and blend until smooth.  Pour melted butter into a 9x13 baking dish and tilt to cover the dish.  Add batter and bake until puffed and golden brown.  About 20 minutes.  Remove from oven and dust with powdered sugar serve with fresh berries and syrup.

Sweet & Tangy Meatloaf

E1 lb. Ground Beef
1 C. Plain Bread Crumbs
1 Egg
1/2 tsp. Garlic Powder
1 tsp. Worcestershire Sauce
1/3 C. Ketchup
1/4 C. Brown Sugar
1/4 C. Apricot Preserves (canned apricots - blended)

Glaze:
1/4 C. Ketchup
1/4 C. Brown Sugar
1/4 C. Apricot Preserves (canned apricots - blended)

Directions:

Preheat oven to 350 degrees.  In a large bowl, combine ground beef, breadcrumbs, egg, garlic powder, Worcestershire sauce, ketchup, brown sugar and apricot preserves. Place in a greased 9x5 inch load pan.  Cook for 40-50 minutes.

In a seperate bowl combine ketchup, brown sugar and apricot preserves.  Remove meatloaf from over after it has cooked, spread on glaze and cook for an additional 20 minutes.

Meatballs

1 pound hamburger
1/2 C Dry Bread Crumbs
1/4 C Milk
2 Tbsp. Finely Chopped Onion
1 tsp. Salt
1/2 tsp. Worcestershire Sauce
1 Egg

Mix ingredients; shape into 1 1/2 inch balls.  Cook over medium heat, turning occasionally, until brown (about 20 minutes).  Or cook in ungreased oblong pan at 400 degrees until light brown 20-25 minutes.

Serves 4

Swiss Bacon Quiche

Ingredients:
1, 9 inch lightly baked pie shell
6 Slices Bacon
1 C Grated Swiss Cheese
2 Green Onions thinly sliced or Chives or Parsley chopped fine (optional)
1 1/2 Tbsp Flour
1/4 tsp Salt
1/4 tsp Nutmeg
3 Eggs
3/4 C. Evaporated Milk (or 1/2 of the can)
3/4 C. Whole Milk

Directions:
1. Prepare the pie shell (bake lightly for 7-8 minutes).
2. Cook bacon until slightly crisp then crumble into small pieces.
3. Sprinkle Bacon, Cheese, Onion, Chives and Parsley over the bottom of the baked pie shell.
4. Combine flour, nutmeg, salt, eggs and milk.  Beat slightly with French whip (not frothy).
5. Pour into pie shell with other ingredients.
6. Bake at 425 for 15 minutes then reduce temperature to 300 and bake for 30 minutes longer.
7. Allow Pie to stand 10 minutes before serving.

Makes 1, 9 inch pie (serves 6).

Strawberry or Raspberry Ice Cream

4 eggs
2 cups sugar
½ tsp salt
2 Tbsp vanilla

Mix egg, salt & vanilla. Gradually add sugar, mix well until sugar is dissolved

Add
4 cups cream
4 ½ cups milk
2 cups smashed berries sweetened with ½ cup of sugar

Put into ice cream maker. Be sure to add plenty of rock salt in your ice.

Milk measurement may not be exact just pour milk into the freezer until it fills to the mark on the side that you are not supposed to fill above.

Lasagna

1-2 boxes of Lasagna Noodles
2 bottles (24 oz each) of Ragu or Prego
2 lbs of Cottage Cheese
4 Eggs
2 lbs Hamburger
3 Tbsp Oregano leaves
3 Tbsp Basil leaves
3 Tbsp Marjoram leaves
Onion chopped
Cheese Mozzarella

Brown hamburger and drain add the chopped onion, oregano, basil, marjoram, salt, pepper and cook.  Take off heat and add sauce.  Add 1/4 of the sauce bottle of water to the mixture.  In a separate bowl combine whip the eggs and then add cottage cheese (add 2 eggs per lb of cottage cheese).

Layer in pan:
-Sauce/meat mixture in bottom
-Noodles
-Sauce
-Cottage Cheese
-Cheese
-Noodles
-Sauce
-Cottage Cheese
-Cheese
-Noodles
-Sauce
-Cheese

Cover with tin foil and bake at 375 for 1 hour and 15 minutes.  Place cook sheet under pan in case if it spills over.  Cook the last 15 minutes uncovered.

Let set for 15 minutes before serving.

Toasted Ravioli

Ingredients:
16 oz package of Meat Filled Ravioli (fresh or frozen - if frozen thaw first)
2 Eggs beaten
1/4 cup Water
1 1/2 tsp Garlic Salt
1 cup Flour
1 1/2 cups Plain Bread Crumbs
1 1/2 tsp Italian Seasoning
Marinara Sauce

Directions:
Place the flour into a zip lock bag and set aside.
Mix the water with the eggs and set aside in bowl.
Mix the Italian seasoning, garlic salt and bread crumbs in a bowl and set aside.

Heat vegetable oil or olive oil in a skillet to 350 degrees.  Place the ravioli in the flour bag, zip and shake to coat the ravioli.  Then dip in the egg wash and then dip in the bread crumb mixture.  Place in the hot oil and fry both side till golden.  Remove from the oil and drain.  Serve with your favorite marinara sauce.

French Toast Bake



Ingredient Checklist:
½ C. Melted Butter (1 Stick)
1 C. Brown Sugar
1 Loaf Texas toast
4 Eggs
1 ½  C. milk
1 tsp vanilla
Powdered Sugar (for sprinkling)



Directions:
1. Combine melted butter & brown sugar.  Then pour into the bottom of a 9 x 13 pan.  Spread evenly to cover the bottom.
2. Beat eggs then add the milk, & vanilla
3. Lay single layer of Texas Toast in pan (you can cut off the crust to make it look nicer)
4. Spoon 1/2 of egg mixture on bread layer
5. Sprinkle brown sugar and cinnamon on top of the first layer
6. Add 2nd layer of Texas Toast
7. Spoon on remaining egg mixture
8. Sprinkle brown sugar (or white sugar) and cinnamon on top
9. Cover & chill in fridge overnight
10. Bake at 350 for 45 minutes (covered for the first 30 minutes)
11. Sprinkle with powdered sugar on top.
12. Serve with warm maple syrup (It is sweet enough you don’t need the syrup)
