BBQ Ranch Grilled Bounty Bowl

Ingredients:

1 cup cooked White Jasmine Rice 
Dash cumin 
Dash Turmeric 
Dash sea salt 
1 Chicken Tender per person/serving (10 oz cooked (13.5 oz raw) for 4 ppl) 
Small Zucchini, sliced into wedges (7 oz)
Bell Peppers, seeded cut into strips (7 oz)
2 ears of Corn (1 cup) 
Black pepper 
1-2 avocados, chopped (120 g)
Bolthouse Farms Ranch dressing (4 Tbsp)
Stubb’s BBQ Sauce, any variety (2 Tbsp)
Shelled Sunflower Seeds (2 Tbsp)
1 Juice of a Lime

Directions:

1. Cook rice according to the directions on the package. Season with a dash of cumin, turmeric and sea salt once cooked.

2. Heat grill to medium. Place chicken, zucchini, bell peppers and corn on the grill. Spray corn liberally with cooking spray and make sure to rotate it frequently. Spray tops of other veggies with cooking spray and sprinkle sea salt, pepper and cumin over everything. Cook chicken and veggies for about 5 minutes per side or until chicken is fully cooked through and veggies are tender.

3. Cut all the corn off the cob and set aside.

4. To each bowl add grilled chicken,  zucchini, peppers, cup of corn, cup cooked rice, chopped avocado, ranch dressing, BBQ sauce, sunflower seeds and a squirt of lime juice. Enjoy warm.

Chicken Curry


Ingredients:

  • 1 tsp Fresh grated ginger
  • ½ cup Onion, chopped
  • 4 Carrots, peeled and sliced
  • 1 Tbsp Curry Powder
  • ½ tsp Ground Cumin
  • ¼ tsp smoked paprika
  • Juice of 1 lime
  • 1 Tbsp Chicken Bouillon Base
  • 1 Cup Water
  • 4 Thin slicked chicken breast, thawed
  • 2 Potatos, 1 inch diced
  • 1 large red pepper, diced
  • 14 oz can coconut milk
  • 14 oz can diced tomatoes
  • 1 tsp salt
  • ½ tsp pepper
  • 1 cup frozen peas
  • Cilantro, chopped

Instructions:

1. In a stovetop or electric pressure cooker, heat the oil (use the Saute function on the Instant Pot) until rippling and hot. Add the curry powder and cook, stirring constantly, for 30-45 seconds.  Add the onion and ginger.  Cook another 30 seconds, stirring constantly.  Add the carrots, bouillon, cumin, paprika and water and heat for 10 minutes.

2. Add the lime, chicken, potatoes, red pepper, coconut milk, tomatoes, salt and pepper.  Close the lid on the pressure cooker and cook on high pressure for 4 minutes (hit manuel and adjust time to 5 minutes).  On the Stove top, bring to a boil and cook until chicken and potatoes are done- about 20 minutes.

3. Let the pressure naturally release before removing the lid.  Once done, stir in peas and cilantro.  Serve over hot, cooked rice or quinoa.

Takes about 1 hour 45 minutes to make start to finish.

Tips:

·       When cooking with butter, heat pan up with butter in it.

·       When cooking with oil, add the oil after the pan is hot.

·       The more you mince garlic the stronger it is.

·       Add 2 Tbsp of kosher salt to the water per pound of pasta

Mexican Vegetable Soup


Ingredients:
  • 1 1/2 cups chopped yellow onion (1 medium)
  • 1 cup peeled and diced carrots (2 medium)
  • 1 1/2 Tbsp olive oil
  • 2 cloves garlic, minced
  • 5 cups vegetable broth
  • 1 1/2 (14.5 oz) cans diced tomatoes with green chilies (Rotel)
  • 1 medium zucchini, chopped (1 3/4 cups)
  • 6 oz diced green beans (1 1/4 cups), optional (*Can substitute squash for beans)
  • 1 red bell pepper, diced
  • 1 tsp dried oregano (Mexican oregano if you have it)
  • 1 tsp ground cumin
  • Salt and freshly ground black pepper
  • 1 3/4 cups frozen corn or drained and rinsed canned hominy
  • 2 Tbsp fresh lime juice
  • 1/2 cup chopped cilantro 
  1. Heat olive oil in a large pot over medium-high heat. Add onions and carrots and sauté 3 minutes then add garlic and sauté 1 minute longer. Stir in vegetable broth, tomatoes, zucchini, green beans, bell pepper, oregano, cumin and season with salt and pepper to taste. Bring to a boil then reduce heat to medium-low, cover and simmer until veggies are soft, stirring occasionally, about 20 minutes.
  2. Stir in corn, lime juice and cilantro and cook until corn is heated through. Serve warm.
**Note when making in the instant pot:
Sauté the onions and carrots in the instant pot first then add the rest of the ingredients.  Put the lid on and move valve to sealed position.  Select the soup function and adjust to less.  When finished you can do a natural or quick release.

Shrapnel Bean Dip

Ingredients:
1 can of White Beans (Navy or Great Northern)
1 can of Black Beans
1 can of Corn
1-2 Avocados (diced)
1/4-1/2 cup of Red Pepper (diced)
1-2 Roma Tomatoes
2 Tbls Red Onion (finely chopped)
2-3 Tbls Cilantro (finely chopped)
1/3 cup Italian dressing (add more if needed)
Squeeze of a fresh lime (about 1/2 Tbls or 1/2 of a lime)
Salt and Pepper to taste
Tortilla Chips

Directions:
1. Drain and rinse the beans and corn.  Dry as best as you can, use a salad spinner and/or place on a paper towel to blot dry.  After they are completely dry add to a large bowl.
2. Add avocados, red pepper, tomatoes, red onion and cilantro to the bowl.  Mix together and then pour the dressing over the top of the salad.  Mix until everything is coated evenly. (If making in advance wait until right before serving to chop and stir in the avocados.)
3. Squeeze the lime juice over the top and gently mix in. Salt and pepper to taste and serve immediately with chips.

Grilled Steak Kebabs

Ingredients:

1/2 C. Olive Oil
1/2 C. Soy Sauce
3 Cloves garlic, minced
1 tsp. black pepper
2 lbs. Steak, cut in 1 inch cubes

1 Red Bell Pepper, seeded and cut in 1 inch pieces
1 Orange Bell Pepper, seeded and cut in 1 inch pieces
1 Green Bell Pepper, seeded and cut in 1 inch pieces
1 Red Onion, cut in 1 inch pieces
McCormick Grill Mates Montreal Chicken Seasoning
Olive Oil/ Veggetable Oil
8 (12 inch) Metal Skewers

Instructions:

1. Wisk together olive oil, soy sauce, garlic and pepper.  Add the steak to marinade and toss to coat.  Cover and let marinate for 30-60 minutes.

2. Put all the cut veggies into a bowl and coat with olive oil.  Sprinkle the Montreal Chicken Seasoning over and salt and pepper.

3. Thread steak onto the skewers and peppers and onions onto their own skewers.  (The reason being the meat and veggie cook at different rates.)

4. Grill kebabs over high heat, put the Veggetable kababs on 5 minutes before the steak turning often until till the steaks reach around 140 degrees and the vegetables are tender.  (Cook for about 5 minutes after the steaks are put on the grill)

Fajitas

Ingredients:
Chicken
Tortilla
Cheese
Onion
Green Pepper
Red Pepper
Tomato or Salsa
Lettuce
Olives
Sour Cream
Fajita Mix
Oil

Directions:
Place 1 Tbsp of oil into a frying pan on med-high heat.  Cut the chicken into bite size pieces and cook the chicken until they are no longer pink inside.  Remove the chicken from the frying pan and saute the peppers and onion.  After the peppers and onions are soft add the chicken back to the frying pan and sprinkle with the fajita mix.  Warm tortillas and add other toppings as desired.
