Pepper Jelly

Ingredients:
3/4 cup chopped bell peppers (green or red or both)- it usually only takes about 1/2 of a large pepper
1/4 cup chopped jalapeño peppers. (usually 3-4 peppers)
1 1/2 cups apple cider vinegar
6 cups sugar
1 pouch liquid pectin (certo).
4 drops food color. (Green or red.)

Directions:
 Put peppers in blender or food processor and blend.  Then put in 5 qt pan with vinegar and sugar.  Stir well & bring to a full boil. Remove from heat & add liquid pectin & food color.  Put in jars, seal and put in boiling water bath for 10 minutes.  This makes 6 1/2 pint jars.

Tips: 
-When chopping the jalapeño peppers don't touch your face or eyes while chopping. Then wash your hands really good after chopping. Or use disposiable gloves while cutting.
-If you want a clear jelly strain out the bits of pepper after cooking.
- It says apple cider vinegar- it is supposed to be better flavored for pickles or pepper jelly but I have used white vinegar and don't notice that much difference.

Sure Jell Pepper Jelly
3 cups chopped bell peppers(red or green or both)
1 cup chopped Jalapeño peppers.
1 cup vinegar
1 pkg Sure Jell
5 cups Sugar

Put chopped peppers in blender.  (You can add the vinegar to the blender to make it easier to blend.  Put in 5 qt pan, Stir in Sure Jell.  Bring to a boil and boil 1 minute Remove from heat and put in jars.

Reference same tips as above.

Stuffed French Toast

Ingredients:
2 packages ( 8 oz. each) Cream Cheese, softened
1 bag (12-16 oz.) frozen Berries, thawed
2 Tablespoons Sugar
2 loafs of Bread
18-24 Eggs, beaten
*You can substitute the berries and sugar with jam.

Mix cream cheese, berries and sugar. Spread cream cheese mixture between 2 pieces of bread. Refrigerate overnight and then cook it like regular French toast. Heat skillet on medium. Dip sandwiches in egg mixture. Place on hot skillet or griddle. Let cook till egg on bottom turns
brown. Flip and cook on other side. Try not to keep flipping. You can peak to tell if it is getting done. You can serve it with powdered sugar & a few berries on the top, syrup, or preserves. This will make about 24 sandwiches.

Potato Rounds/Irish Nachos

Ingredients: 
  • 1 1/2 Pounds of potatoes (Cleaned and sliced 1/4 inch thick)
  • 2 Tbls Olive Oil
  • 1/2 tsp dried rosemary leaves (crushed)
  • 1/2 tsp Thyme
  • Salt & Pepper
  • 6 Bacon slices (cooked, drained and crumbled) 
  • 1 cup Shredded Cheddar Cheese
  • Barbecue Sauce
  • Sour Cream or Greek Yogurt (optional)
  • Pico de gallo/salsa/diced tomatoes (optional)
  • 2 minced Green Onion slices (optional)
  • 1 Tbls Chopped Cilantro leaves (optional)


Directions:
  1. Preheat oven to 450º. Wash and slice potatoes leaving the skins on.  
  2. Put potato slices into a bowl or gallon zip lock bag.  Drizzle olive oil, rosemary and thyme over potatoes and mix to coat the potato slices.  
  3. Place the potato slices, in a single layer, onto a baking sheet.  Bake 20 minutes, turn over and bake an additional 20 minutes.
  4. Using a pastry brush, generously brush the potato slices with barbecue sauce.  
  5. Sprinkle each potato slice with the crumbled bacon and then top with the cheese.  Return to the over and bake 3-5 minutes or until the cheese is completely melted.  
  6. Sprinkle with green onions and cilantro.  Then serve with sour cream, yogurt and/or salsa/tomatoes.

Grandma's Homemade Strawberry Ice Cream

Ingredients: 
3 cups mashed fresh strawberries     
1 quart whipping cream
3 cups sugar                                      
1 quart half & half
4 eggs                                                 
1 can evaporated milk
2 TB lemon juice                                 
1 TB vanilla
Whole Milk                                           
Dash of salt

Directions: 
-Mash fruit and let stand for 1 hour with 1 cup of the sugar sprinkled over the top.
-Beat eggs with remaining sugar until lemon flavored & think.
-Add strawberries and put all in canister of 6 quart freezer.
-Whip cream and add to  ice cream mixture. 
-Then add half & half, evaporated milk,vanilla and salt.  Add enough whole milk to fill freezer.
-Freeze and enjoy.

Breadsticks

30 Rhodes Rolls
1/2 Cube of butter
Parmesan Cheese

Melt cheese on low heat in frying pan.  Add parmesan to melted butter.  With soft roll dough roll between hands and then roll in butter and cheese mixture.  Place on a cookies sheet and bake at 350 for 15-20 minutes.

Pizza Casserole

1 can Tomato Soup
1 can Cream of Mushroom
1 can Sliced Mushrooms
1 can Tomato Sauce
1 lb. Ground Beef
1 Onion
1/2 pkg of noodles
Cheese

Brown hamburger with the onion.  Cook the noodles.  Combine all ingredients together and place into a 9x13 glass dish.  Top with cheese and cook at 350 for 30 mins.  (Or you can cook it in the microwave.)

Milk Hot Cholcoate

1/2 pt Heavy Whipping Cream
1/3 cup Sugar
1/3 cup Chocolate Syrup (Ice Cream Topping)
Milk

Whip whipping cream until it is light and fluffy.  Add sugar and chocolate syrup then refrigerate for at least 2 hours.

Heat milk to scalding.  Pour milk into a mug and put a dob of chocolate mousse on the top of the milk.  Serve without Mixing
